Description
The colour is bright lemon with green highlights. Aromas of peach, mango, and lemon mastic along with those of white flowers and herbs on the nose. In the mouth the aromas continue with the same intensity and are balanced by its refreshing acidity. The aftertaste is fruity, herbal and persistent. It accompanies fried seafood, shrimp kadaifi, marinated fish such as tuna, salmon, anchovy, Japanese sashimi, carpaccio, cheese croquettes, classic stuffed peppers, as well as flavors with an emphasis on garlic.

Savatiano
Savatiano is Greece's single most widely planted grape variety, historically the backbone of retsina and still the everyday white of Attica and central Greece. Once dismissed as a workhorse grape grown purely for high yields, low-yield, non-irrigated old vines have shown it can produce genuinely fine, ageworthy whites with citrus, pear and floral notes and, with time in barrel, an appealing oily texture.
Producer
Mylonas Winery was started in 1917 in Keratea, eastern Attica, by grandfather Antonis, who fermented his grape must in amphorae before stainless steel tanks were common. His son Dimitris continued the tradition and expanded the vineyards, and today the third generation, the Mylonas brothers, run the estate — bottling wine under their own name only since 2006. Their 12 hectares sit at 80–350m in the foothills of Mount Panion, on limestone and schist soils cooled by sea breezes, and are planted mostly with Savatiano, Attica's traditional grape and the historic base of retsina, alongside smaller plots of Assyrtiko, Malagousia, Aidani, Mandilaria and Agiorgitiko.
