Debina
Debina is the white grape of Zitsa, in the mountains of Epirus, where it has been the main variety since at least the 16th century. Its naturally high acidity and low alcohol make it especially suited to sparkling and semi-sparkling wine, traditionally made using the closed-tank (cuve close) method, though it also produces fresh, still whites with apple and pear character.
Producer
This tsipouro comes from Zitsa, a mountain village in Epirus at around 600–700m, whose limestone soils and cool climate have long suited Debina, the area's signature white grape — more usually made into Zitsa's high-acid sparkling and semi-sparkling wines. Wine growing here is largely organised around a cooperative, the first of its kind in north-western Greece, founded in the 1970s to give the region's small growers a shared winery and distillery. Alongside its wines, the cooperative distils Debina itself into tsipouro, both in a classic style and oak-aged, continuing a grape-brandy tradition that runs alongside Zitsa's better-known sparkling wines.
