Description
The VISSA wine has been produced from fully ripe organic farming Xinomavro grapes from our 20 y.o. family-owned single vineyard named “PaleoKastra”(means the old castle)-“Vissa” at the time of Homer. Multi-cloned low yield Xinomavro vines are growing in low fertility limestone-clay soils with almost 30% active Ca+2. It was vinified in 35hl stainless steel tanks, undergone full of malolactic transformation and matured 14 months into 70% new oak of which 50% 228l, 50% 400l, 20% 2nd use 225l and 10% 3rd use 225l. The VISSA wine is physically stabilised.

Xinomavro
Xinomavro is a thin-skinned grape variety widely planted in northern Greece. The variety is highly regarded in its native Greece as the finest red wine the country has to offer. With its characteristically high tannin and acidity, Xinomavro is structurally one of the biggest red wines in the Mediterranean and indeed Europe.
The word Xynomavro itself is a conjunction of the Greek words for acid and black, though this is often translated as black and sour. This gives some indication as to the flavour and structure of the wines made from the variety, which in youth remain true to their name, although Xynomavro wines can age gracefully for many years. Classic flavour characteristics include prune, strawberry and sun-dried tomato.
The grapes themselves are blue-black and grow in tight clusters. The size of berries varies within the different clones of Xinomavro, but all vines are late ripening and of fickle nature. Vintage variation is a significant factor to consider with regard to purchasing decisions since the weather can play a large role in Xynomavro's quality.

Producer
The Karadimos Estate is a family winery near Megaplatanos, Atalanti, in central Greece, founded by brothers Dimitris and Giannis Karadimos. Dimitris spent years teaching physics before retraining as an oenologist in 1998, joining forces with Giannis, who already had experience in viticulture. Their 65 acres of vineyard climb the mountainous slopes of Knimida, largely within the archaeological site of Vissa, and have been organically certified since the estate's earliest plantings — Assyrtiko in 1998, followed by Malagousia, Sauvignon Blanc and finally Xinomavro in 2000.
