Cabernet Sauvignon is one of the world's most widely planted red grapes, originally from Bordeaux, prized for its firm tannins, dark fruit character and ability to age. In Greece it is grown both as a varietal wine and, more often, as a blending partner that adds structure and colour to native grapes such as Agiorgitiko.
Producer
Babatzim traces back to 1875, when the Babatzimopoulos brothers founded a distillery in Constantinople, drawing on a family raki-making tradition from Silivria, near the city. The 1922 population exchange forced the family to Greece, where they resettled among fellow refugees from Eastern Rumelia and rebuilt the business at Anchialos, near Thessaloniki. In 1971, Anestis Babatzimopoulos — grandson of the founders — planted the family's first experimental vineyard on the slopes of Mount Vertiskos, later converting the estate to organic farming and adding a second winery within the vineyard itself, near Lagadas. Four generations on, the family still distils tsipouro and ouzo from its own Macedonian grapes alongside a range of regional wines.
