Pre-fermentation maceration in controlled temperature environment, while the grapes remained in contact with the juice for 7 days (Skin Contact) in each tregos separately. Alcoholic fermentation at graded temperatures. Maturation for 12 months in French oak barrels of 3rd use and low toasting. The wine remained on its lees for 12 months with periodic stirring. Aromas of lemon blossom, citrus, bergamot, jasmine, and white-fleshed fruits on the nose. Palate has ripe citrus fruits & nectarines with vanilla notes, sweet spice and a peppery hint of ginger. It surprises pleasantly with its live acidity. Of particular interest is its rare ability for aging and its ability to evolve constantly in the bottle. Ready for consumption. Keep it in the bottle for 7-12 years for maximum results. Ideal with fish, white meats, pasta and cheeses.
